How To Make Peanut Butter and Jelly Bars

It’s fun as a Dad Cooking Blogger to stumble upon cookie recipes that make you feel like a kid again. I love PB&J sandwiches; in fact, I can never get tired of eating them. However, I am picky about my PBJ, and it’s got to be a certain way, because I like my Peanut Butter crunchy and I got to have Jam, not jelly on my sandwich. The bread has to be extra soft and doughy… How about you?

As fall turns into winter this year, I wanted to get back into baking some of my favorite cookie recipes. Even though this PB&J Bar is not technically a cookie; you can still have the taste of a cookie that I know your children will love. Ingredients / Shopping List: Makes 12- 15 servings

1-Cup, All-Purpose Flour

1- Cup “Quick” Oats (see video)

1/3  Cup Light Brown Sugar

1/3 Cup Granulated White Sugar

½ Cup Peanut Butter

½ Teaspoon Salt

¼ Teaspoon Baking Soda

1- Stick , Un-Salted Butter, softened

1-Cup of your Favorite Jam

Equipment: 2 Mixing Bowls, 9 Inch by 9-Inch Baking Pan, Oven

 

Cook Like a Dad Cooking Steps: Mix your Oats!

Preheat Oven: 350* Degrees F

Take your Baking Pan and paste a light film of butter at the bottom and sides of the pan. Take a handful of Flour and sprinkle flour throughout the pan. You want to do this because it creates a  “buffer” between your crumble mixture and the pan.

Take a large mixing bowl and combine all dry ingredients, (Flour, Salt, Baking Soda, Sugars and Oats). Mix well. Next, add the ½ Cup Peanut Butter and mix using your hand to allow the oats and other ingredients to mix well. I know this gets a little messy, but you need to get the Peanut Butter into the mixture well enough before you add the butter. This should take a few minutes and when you feel like the peanut butter is mixed in, add portions of the stick of butter until you finish the stick into the mix

Time to Spread

Next, take 2/3 of the mixture from the bowl and spread evenly with your hands across the bottom and sides of your baking pan. When done, place the pan in the oven for 15 minutes OR when you see the sides start to brown. You need to first bake the crust before adding the jelly… After the crust has baked, allow to cool before placing jelly. Take 1-Cup of your favorite Jam and spread evenly across the crust. Take the remaining contents of your bowl and sprinkle the crumble mixture over the top of the Jam.

Bake Again…

Take the Baking Pan and bake the entire contents for another 20-minutes. You will see the sides of the cookie bar “bubble”, which means that you have a pretty well cooked PB&J Cookie Bar waiting to be eaten. After your 20-minute bake time; allow time for cooling and serve warm.
