Easy Pecan Pie Recipe

Let me tell you a little background on my life. My girlfriend is from Gulfport, Mississippi and many of my recent recipes have been coming from her influence. My eagerness to learn new ways to cook for my family has really made our dinner menu expand.  I still continue to make the meals that influenced my childhood. My Mexican and Italian cooking is still a standard around my kitchen; however, I am developing new, Southern home-style cooking thanks to this wonderful woman in my life.

This Pecan Pie recipe takes a combination of two types of Pecan Pies. There is a New Orleans version, which uses the Brown Sugar and Dark Corn Syrup; and then there is the Mississippi style, which incorporates the Light Corn Syrup and White sugar. In this recipe, I am using a combination of both to make the Cook Like a Dad version. The prep time is easy and in less than an hour, you will have a great Pecan Pie worth bragging about over the Thanksgiving Holiday… Enjoy!

 

Ingredients: Makes a 9-Inch Pie

(3) Cups of Pecans

(7) Eggs… that’s right, 7 eggs

1/3 Cup Brown Sugar

¾ Cup White Granulated Sugar

(1) Cup Dark Corn Syrup

(2) Cups Light Corn Syrup

1 – Teaspoon Salt

1-Stick Unsalted Butter, melted

(2) Pilsbury Pie Crusts

(1) Teaspoon, Vanilla Extract

*Optional Item: 1/3 Cup 2% Milk

Equipment: 9 – Inch Pie Crust, Mixing Bowl, Oven

Pre-Heat Oven, 350* Degrees

 

Cooking Steps: Beat the Eggs!

Crack open all 7 eggs and mix them in a large Mixing bowl. Add Sugars and Corn Syrups together and stir gently. Add teaspoon of Vanilla extract, Salt and the melted butter. Now take your three cups of Pecans and add to the mixture. Stir well. *Optional Item: You can add 1/3 Cup of 2% Milk to make the filling taste lighter, less dense. Mix well.

Pie Crust

A good Pecan Pie has to have a thick crust, that’s why I like to double up my crust in this recipe. Take your Pilsbury Pie Crusts and place the first one over the pie pan and smooth it out around the pan, evenly.  Next, take the second one and place in the middle and massage the dough “Out” to the edges and make sure the pie pan has pie crust over the edges.

Pour your Pecan Pie mixture into the piecrust and place the pie into the oven.

Cook Like A Dad Baking Tip: Take Aluminum Foil and cover all edges of the pie crust. This technique protects the edges from burning and drying out. Keep the edges covered with a thin strip and you will have golden crust.

First 15-minutes: 400*Degrees

For the first 15-minutes of baking time, raise the temperature of your oven to 400*Degrees. After the 15 minutes and the remaining 30- minutes, keep the oven at 350 * Degrees.

Total baking time: 45 minutes.
