Leftover Makeover…. Chicken Recipes

 

 

 

 

 

 

 

 

 

 

Don’t Choke the Chicken!

Are you frustrated and need leftover ideas for that, pre-cooked, Rotisserie Chicken you bought at the grocery store? Don’t choke that chicken; let CookLikeADad give you three easy recipes that will turn the leftover chicken into two more meals.

 

Chicken Taquitos:

1 Dozen Corn Tortillas

1 Tablespoon Adobo Seasoning

3 Stalks of Green Onion, Chopped Fine

1- 3oz. Can of Herdez Green “Verde” Sauce

6 oz. Container of Sour Cream for topping

Optional: Shredded Cheese and Lettuce

Equipment: Fry Pan, Cooking Oil, and Toothpicks

 

 

 

 

 

 

 

This is a family favorite at my house. You don’t need a lot of meat to make this dish. Just pull off portions of the leftover chicken meat. Wrap in a damp paper towel and warm the tortillas in the microwave for 1-minute or until the tortillas are warm to the touch. You need warm tortillas to “roll” your taquito.

 

Heat a lightly oiled fry pan on Med/Hi heat.  Sprinkle Adobo seasoning on the cooked chicken and place into fry pan with chopped green onion. Mix together and take chicken back out after onion has cooked into the meat, (about 5 minutes), place meat in a bowl and ADD more oil to the empty fry pan and lower heat to MEDIUM.

 

Lay one warm corn tortilla on a flat on counter. We are going to roll the tortilla WEST to EAST like a cigar roll so take enough chicken meat to cover the edge of the tortilla, (The portion should resemble the size of your index finger). Now roll the meat and tortilla together and take a toothpick and poke diagonally across the taquito, (not straight across, but at an angle).

Repeat until you finished the dozen tortillas.

Next, place the taquitos into the hot pan of oil, (you can probably cook three at a time). Turn taquito on all sides or at least until the taquito appears crisp.

Serve with Sour Cream Topping and Herdez Green Sauce. The Green sauce is not hot and makes the dish more flavorful. You can also add shredded cheese and lettuce for additional toppings.

 

 

 

 

 

 

Tortilla Soup

1-One Medium Brown or Yellow onion, peeled and halved

3-Bay Leaves

1-Tablespoon of Adobo Seasoning

1- 6 oz. package of Feta Cheese, Cut to small bite sized cubes

1- Large package of Corn Tortilla Strips, (Kids Tip: You can also use Doritos )

1- Large Tomato, Chopped and remove goo from tomato

3-4 Radish’s… try to say that 3 times really fast!) Chopped fine

1- Large Avocado, Cut to small, bite-sized cubes

Equipment: Boil Pot with lid, Serving bowl

Take what’s left of your chicken and remove remaining meat. Cut meat down to small, bite sized portions. Take Chicken carcass and place in large boil pot. Fill water to the carcass line and place onion, adobo and bay leaves with the chicken. Cover pot with lid and Cook on medium heat for 30 minutes.

30 Minutes Later…

Remove bird from pot. Strain the broth into a serving bowl. If you don’t have strainer, take a paper towel and place over serving bowl to keep leftover chicken debris and ingredients out of bowl.

Now to serve, place a bowl of the broth with the combination of the leftover chicken pieces, feta cheese, radish and avocado. Top with the tortilla strips. For best results with kids, top the soup with any flavor variety of Doritos Tortilla chips. It might make a mess, but you will have happy eaters!
