Cream Corn Muffins

The trick to this recipe is using cream corn and a shot of Tabasco sauce in the batter. I know this sounds a little funky, but wait until you give them a try at your next party where you need a special appetizer. These muffins can stand apart at any party as an appetizer or at your next meal when you need muffins served.

Ingredients

Shopping List / Ingredients: Makes 12- muffins

(1) Package, Jiffy Corn Bread Muffin Mix

(1) Table Spoon Tabasco, Chipotle Sauce

¼ Cup of Milk

¼ Cup Butter, Melted

(1) Cup Cream Corn

(1) Cup, Sargento Cheddar Cheese

½ Cup Real Bacon Bits

½ Cup Sour Cream

½ Cup Real Mayonnaise

(1) Slice of White Onion, Chopped fine

Equipment: 2 Mixing Bowls, Muffin Tin, Oven Pre-Heated, 400 Degrees. Prep Time 10 – 15 minutes, total baking time 30 minutes or less…

 

Cooking Steps: The First Bowl to Super Bowl

Take a large mixing bowl and empty box of Jiffy Corn Bread mix, Milk, and melted butter. Mix slowly and then add the Tabasco Sauce and Cream Corn and Bacon Bits into the mix. You can use the standard Tabasco Sauce, however, I chose the new Chipotle flavor for that “smoked” taste that I prefer.

Pre-Heat Oven to 400 Degrees

Next Step: Start the Second Bowl

Take another separate mixing bowl and combine Cheese, Sour Cream, Mayonnaise, and chopped White Onion. Mix Well. At this point, your oven should be ready and it is now time to grease your muffin pan with a light coat of butter. You do not need any paper cups in the muffin pan; these muffins will heat up right out of the tin.

Next Step: Pour the Muffins

Take your Muffin Batter and pour the batter half way in each cup. When the muffin pan is completed, take the second bowl topping mix and fill the rest of the muffins with a dab of the topping mixture, (see video).

Time to Bake:

Place Muffin tray in the oven on standard bake for 30 minutes, or when you see a medium to dark golden top of the muffin. Serve warm and enjoy!
