Ingredients: Feeds a Family of 4

1 to 2 Cups Leftover Chicken (pulled, cubed, etc.)

4 -Cups of Pearl Couscous

1-Cup Grape Tomatoes

1-Cup Mushrooms

3 Stalks of Chopped Green Onion

1 tbsp. Olive Oil

2 tsp. Poultry Seasoning

1 tsp. Garlic Salt

Pepper to taste

Chopped Basil (optional)

Equipment: 4 Quart Boil Pot with lid. Flavor Tip:  Substitute broth for water when preparing the couscous.

This recipe is great way to feed your family a tasty meal without a lot of prep time using leftovers from the night before. In my case, I had served a Rotisserie Chicken the night before for dinner and had saved the leftover Chicken to make this dish.  To give this dish a special look, I have added Couscous. Couscous is a very popular alternative to pasta and rice. It’s easy to make and has a unique texture and flavor. You can find Couscous in the rice section of your grocery store and is offered in both plain and colorful varieties, (I used the color variety in this recipe, but it does not matter which one you use).

 

Directions:

Heat water,( or use Chicken Broth option) as directed by couscous packaging, 12 to 15 minutes.

Next, cube the leftover chicken while water is heating.  Add all ingredients, (Mushrooms, Green Onion, and Grape Tomatoes) to boiling water with couscous. Add Olive Oil and spices into mix and stir slowly while reducing heat to a simmer. After all contents are mixed, lower heat and place lid over pot. Serve warm and enjoy!
