Fathers Day Fish Recipe: Grilled Ono with Orange Honey Glaze

 

 

 

 

 

 

 

Getting Fit Dad and Cook Like A Dad combine their talents and offer Dads a great summer meal that is packed with healthy protein and flavor. Ono is a light, white fish that is firm and sweet. Combine sautéed Onions with Yellow and Red Peppers in a light Orange sauce and you have great, healthy, Father’s Day meal.

Shopping List: Serves a Family of 4

(4) 6-8 oz. Ono Filets (You can also use Mahi Mahi)

1- Jar of Orange Marmalade  (Orange Jelly)

3 TBSP of Honey

1- Tablespoon Montreal Steak Seasoning

1 Large Sweet Onion, 1 Red Pepper, 1 Yellow Pepper

Equipment: A BBQ Grill, Small Fry Pan, Cooking Oil, Small bowl for mixing Jelly

 

Cooking Steps: Make Sauce

Take 3 to 4 large Tablespoons of Orange Marmalade and place in small bowl. Add the 3 tablespoons of honey and place in Microwave for 30 Seconds, allow to warm. Take out of microwave and mix together with spoon.  Orange Marmalade has the bit of Orange in the jelly and if you cannot find Marmalade at your grocery store, simply buy Orange Jelly and buy an Orange and shave the rind off a side of the orange to add the orange peel into your sauce. Set sauce aside, keep warm.

 

Step 2:  Side Dish Prep.

Step 3: Sautee Onion and Peppers

Take a small fry pan and set on stove, lightly greased with cooking oil on Med setting. Thinly slice onion into rings and separate rings into a bowl. Take both Red and Yellow Peppers and slice the peppers like you would slice an orange. Place sliced peppers in the same bowl with Onion. Add a tablespoon of Cooking oil and a tablespoon of Montreal Steak Seasoning into the bowl with peppers and onion. Mix with hand to make sure everything is seasoned and oiled up. Place the entire bowl of onions and peppers into the heated fry pan.  Keep the mixture moving in the fry pan to make sure all contents are evenly cooking. When peppers and onions begin to brown, lower the heat to simmer and place lid over fry pan.

 

Step 4: BBQ the Fish

Ono is a meaty fish and does not require a lot of fuss on the grill. Simply take a little cooking oil or spray and lightly grease the filet so it won’t stick to your grill. On a Med- High heat grill, allow filet to cook, 5- 7 minutes on each side. Bring Fish back inside and place the Orange Sauce over the fish while the fish is still warm. Take the remainder of Orange sauce and combine the sauce with the Onion and Peppers, mixing well into the pan.

 

Serving: Coconut Rice as the base, Filet of Ono, Onions and Peppers on top of filet. You now have a great combination of a healthy and tasty Father’s Day meal. Enjoy!
