Make French Onion Soup in a Crock Pot

French Onion Soup

One of my family favorites is French Onion Soup in a crock pot. If you don’t have a Crock Pot, you need to get one; especially if you have a family to feed dinner every evening. There is nothing better than throwing a bunch of ingredients into a crock pot, working a full day, and then having a wonderful meal waiting for you when you return home. With a little planning, the crock pot saves you time and trouble.

Ingredients: Feeds Family of 4

  • 3 Onions ( Sweet Texas Onion, Red Onion)
  • 2 Table Spoons Minced Garlic
  • 2 Table Spoons McCormick’s Montreal Seasoning
  • 1 Table Spoon, Italian Seasoning
  • 2-3 Table Spoon of Olive Oil
  • 3 Cans of Beef Broth
  • 2 Table spoon Worcestershire Sauce
  • 8 oz. Package of Cheese, Mozzarella, Parmesan or whatever you have at home
  • Optional Item: Package of Mushrooms, Salad Croutons or French bread

Equipment:

  • Fry Pan, Medium heat
  • Crock Pot, Low Setting, 6 hours
  • Large Bowl

No Crying in the kitchen…

Chopping Onions doesn’t have to be difficult. In fact, there’s no crying in my kitchen when it comes to cutting an onion. My secret is keeping my onion wet and the blade of my knife wet at all times when cutting or chopping. Take your first onion and cut three thick slices. Use these slices to make a course chop cut of the onion and place in a bowl. Take the other remaining onions and ‘thinly’ slice them. Place your onion medley in a bowl and add the seasoning. Just use your hands and mix the combination of Olive Oil, Montreal, Italian, Worcestershire, and Minced Garlic. Place the onions on a dry, Med – High Heat, frying pan, skillet or whatever you have to grill this onion concoction. Let the Onions grill into a dark, crispy mess…

The Beef Broth Base:

If you want to add the mushrooms, now is a good time to slice them in halves and empty your 3- 4 cans of beef broth with the mushrooms into the crock pot. Now that your onions are grilled, put onions into the crock pot along with everything else. Place Crock Pot on a medium to low setting. Allow the soup to cook for 4 to 6 hours. The longer it sits in the crock pot, the better the flavor your soup will have.

Serving Time:

When you are ready to serve the soup, take smaller bowls out and place seasoned salad croutons or a slice of toasted French bread in the soup bowls. Cut a couple of thin slices of Mozzarella Cheese and give it a quick shot in the microwave to melt,(any soft cheese will do). The soup should be served warm and it’s great to have a loaf of French Bread and butter around for the meal.
