When the weather is cold and wet outdoors, sometimes you want to bring summer BBQ taste into your life a little early. I have a great, Summer Steak recipe that your family and friends will demand year around. This recipe is a great way to bring that smoked, BBQ flavor indoors and turn that cold weather frown, upside down… With just a little planning and few key ingredients to your marinade, you can bring summer back with or without an outdoor grill.
Dry, 9- inch skillet, High-Heat Setting. (Or Outdoor Grill, high heat setting optional).
(1) One Gallon Size Ziploc Bag
Shopping List: Feeds a Family of 4
1.5 pounds of Skirt Steak or Flank Steak
1- 4oz. Can , Herdez Brand Chipotle Chilis
1- 8oz. Can Of V8 Spicy Hot Tomato Juice
2 Tbsp Worcestershire Sauce
1 Tbsp A-1 Steak Sauce
2 Tbsp Montreal Steak Seasoning
1- Lemon, (Squeeze contents into a cup, remove seeds)
1-Tbsp Minced Garlic

Set the Stage
The first step is getting the meat into the marinade. You need about a 2-hour prep time for the marinade to work, so make sure you have read this recipe and gathered the ingredients, before you invited your friends over to eat. Take the Ziploc bag and take all the liquid items in the recipe and pour them into the bag, (V-8, Worcestershire, A-1, Lemon Juice). Next, add the minced garlic and close the bag and allow the ingredients to mix together. My kids love to help do this part because they like the way the bag feels ‘squishy’… now, it’s time to rub the meat.
Rub the ‘Smoke’ into the Meat
The next step is to take the dry Montreal Seasoning and rub the spice into the meat. Make sure you place the spices into the palm of your hand and massage the spice into the meat, both sides. The next step is rubbing a Chipotle Chili into the meat before placing into the bag.
Chipotle Chili is used in a variety of Southwest recipes. This chili delivers a smoked, but spicy taste to whatever it touches. Be careful, because it is easy to overwhelm any recipe with the spiciness. I recommend the Herdez Chipotle Chili because they have a 4 oz. can that is easily available in most grocery stores in the International / Mexican Food section. Open your can and remove one chili pod from the can. The chili is soft and covered with dark brown gravy around it. Mash the chili in both hands and rub this mixture into the meat, gravy and all. After you cover both sides of the steak with the Chipotle gravy, place the steak in the Ziploc bag with the rest of your marinade and let it sit in the refrigerator for 2 hours.
2 Hours Later…
After the 2 hour waiting period has expired, heat up your skillet or outdoor grill, Medium-Hi Heat. Take your steak out of the marinade and use a paper towel to pat most of the excess liquid off the steak, (Go ahead and throw away the remaining marinade). A Skirt Steak is a very lean cut of beef and doesn’t require a lot of cooking time. When your grill or griddle has reached a high heat, put the steak on and allow it to cook to a Medium-rare setting, which is about 4 to 5 minutes each side.
Once the meat is cooked, place steak on a cutting board and let sit for 5 minutes before slicing. Take the steak and cut thick slices across the grain. Grain of the meat is just like the grain you see in wood, so when you cut across the grain of meat, this helps capture the best flavor of your steak and marinade.
The flavor of this steak should explode in your mouth. There is nothing better than a savory cut of beef that reminds you of those long summer days enjoying a back yard barbeque. I hope you enjoy this recipe.
