Friday Night Cooking
The last thing I want to do on a Friday night is to spend too much time in the kitchen. The weekend is about to start so I need something quick and tasty that the whole family will enjoy. I have three kids and it’s just about impossible to make them all happy. The one thing they can all agree on is Nuggets. Learn how to make Chicken, Pork, and Fish Nuggets.
Shopping List: Feeds a Family of 6
2 Boneless Chicken Breasts
2 Fish Filets – White fish like Cod or even Catfish
2 Pork Chops
2 Cups Milk, Low Fat
2 Cans of Pringles Potato Chips, BBQ and Salt & Vinegar
1 Cup of Mayonnaise
Oven, Pre-heat to 400
1-Gallon Ziploc Storage Bag
2- Lightly greased Cookie Sheets
Cook Like a Dad Cooking Steps:
Pre-Heat Oven: 400 F
Take each of your meats and cut them separately into 2-inch nuggets. Cut the fish into 2-inch nuggets and place on a separate plate,(the fish will have a different coating before baking). When all meats and fish are cut, take the 1-gallon Ziploc bag and pour 2 cups of Milk into the bag. Place both Pork and Chicken nuggets into the bag and let them sit for a minimum of 5 – 10 minutes. While the meats are soaking in the milk, take the fish nuggets and coat each nugget with mayonnaise. It’s perfectly fine to use your hands and rub the mayo all over the fish. When done, take the fish and place in a bowl.
Time for the Chip Dip!
Take another 1-Gallon Bag and dump all of the BBQ Chips and half of the Salt & Vinegar Chips into the bag. Mash the bag of chips down a fine, but chunky mess. Go back to the Pork and Chicken bag and drain all the milk out of the bag. Grab one nugget at a time and drop into the bag of chip mixture. The nugget should ‘grab’ the chip breading and when it does, place the breaded nugget onto a greased, cookie sheet. Bread the remaining Pork and Chicken Nuggets and put them all on the cookie sheets.
Back to the Fish
For the fish, we are going to take the remaining Salt & Vinegar chips and mash them into the same mashed mess as we did before, but we are going to place them in a shallow bowl. Take your fish nugget and dip into the breading bowl. The Mayo should grab the breading instantly. Dip all fish nuggets into the breading bowl and place on a cookie sheet.
Ready to Bake
Now that we have the Chicken, Pork and Fish nuggets breaded; its time to put them into the oven. Have oven pre-heated to bake at 400F. Place the nuggets in for 18-20 minutes or until the nugget has a rich brown, crispy texture. If you are unsure of the cooking time, take one out and cut it in half. The meat should appear white and firm. These nuggets can go great with a variety of dipping sauces that you can make from home, (Get your kids involved with the sauces). Combine Ketchup with peanut butter and honey, or Mayo and hot dog relish. Your options are endless. I know you will enjoy these recipes for many Fridays to come.
